Guri guri is a popular frozen treat on Maui that’s a hybrid between soft serve ice cream and sherbet. This copycat recipe is cool, creamy, and perfect for the warm weather.

If you’ve ever been to Maui and tried Tasaka Guri Guri, then you know how amazingly yummy this is. One thing I miss with the shut down across the nation due to the current stay at home orders is definitely guri guri. So, I decided to try and make my own copycat recipe.

Some other popular island treats you should try mochi waffles, li hing mui lemon peel gummy bears, or furikake animal crackers.

And now a little history. . .

Jokichi Tasaka created the yummy frozen treat in the early 1900s. It was originally called “goodie goodie” to mean something good. However most people mispronounced the word as guri guri and the name just stuck.

The Tasaka family opened shop on Maui and moved a handful of times, but has been located at Maui Mall since 1973.

The recipe is a protected family secret that only a select few know. There have been many offers to open up other shops and sell the recipe, but the family has held firmly to their small family owned and operated business.

Guri guri has all of two flavors: strawberry (being the more popular one) and pineapple.

This recipe is a copycat for the strawberry flavor.

Do I need an ice cream maker to make guri guri?

No, but I like to use one as it gives the mixturei a soft serve consistency similar to the original recipe. I like to use the KitchenAid stand mixer with ice cream maker attachment, but you can use any ice cream maker.

What if I don’t have an ice cream maker?

Not to worry. Once the ingredients are mixed you can place directly in the freezer. This will give the mixture a more firm set. If you wish to have a more soft set consistency you can take the frozen mixture and add a splash of milk and blend in the blender. This will give it a more soft consistency.

How to store guri guri?

Guri guri should be stored in an airtight container in the freezer. This will keep for 3-4 months.

What other flavors can I use?

You can flavor this any flavor you wish. Strawberry and pineapple like the original or be adventurous and try guava, liliko’i, orange, lemon, lime, etc.

How to make guri guri?

To a bowl add water and strawberry syrup. Mix to combine.

Then add condensed milk and heavy whipping cream. Whisk until well combined.

At this point you can use the ice cream maker attachment for your stand mixer if you have one. Pour the mixture in. Set to low speed and allow to churn for 15-20 minutes.

If you do not have an ice cream maker you can freeze right after mixing ingredients together for 3-4 hours or overnight. Mixing every hour while in the freezer will help to keep the soft serve texture.

If the mixture is too firm when ready to eat you can add a splash of milk with the guri guri in a blender and blend until smooth.

  • 2 cups water
  • 1/4 cup strawberry syrup

  1. I made the original recipe with water but it was too icy so I used 2% milk instead of water and it was more creamy and I also added in more strawberry syrup.

    • Great swap out. The trick to keeping the ice away is keeping the air out. Air is the enemy.

  4. I don’t have pineapple syrup available; will simmering pineapple juice to a syrup consistency work?
