This easy rotisserie chicken meal prep was SO easy, I hesitated calling it a recipe. It’s really a simple strategy on how to make your meal prep easier after bariatric surgery.

If you don’t have time to cook on the weekend, purchasing a rotisserie chicken from your local grocery store can be a convenient way to set yourself up for the week. Then adding some steamed pre-cut veggies to the mix makes it a meal. You’re going to love how easy this is!

How to use a rotisserie chicken in meal prep

You can use a rotisserie chicken in so many ways.

You can use it to make:

  • salads
  • soups
  • stir frys
  • filling in lettuce wraps

It’s an easy protein to eat after surgery and quick to prepare. In this recipe I am using it as the centerpiece of the meal with some added steamed vegetables on the side.

As an added bonus, you can use the leftover bones to make bone broth which can count toward your fluid intake.

Can I eat all the parts of the rotisserie chicken after bariatric surgery?

Yes, most of it. Immediately after bariatric surgery, it would be recommended to avoid the skin because your body cannot tolerate too much fat.

The dark meat of the chicken such as the thighs and drumsticks contain zinc and b vitamins, which is good for your body after surgery. Many post-ops claim the dark meat is easier to eat than the white meat because it’s moist. The dark meat does have higher fat than the white meat but it is not significant.

How to make this rotisserie meal prep recipe

First, place all your raw veggies in microwave safe container and add 1/3 cup of water. Cover with a microwave safe lid and cook for 4-5 minutes.

While veggies are steaming, begin removing chicken from the bone. Weigh out between 3-4 oz of chicken in each meal prep container. Once veggies are done add 1/3 cup of veggies to each meal prep container. Cover with lid and place in fridge until ready to use.

You may also add sugar free barbeque sauce if you are looking for a little more flavor.

Bariatric Diet Modifications

Pureed:

  • Add the rotisserie chicken and steamed vegetable to blender. Add 1 cup of chicken broth and blend until desired consistency. Add more broth if necessary.

Soft:

  • Serve as is. You can switch the broccoli to carrots, green beans or zucchini if broccoli is too gassy for you at this stage.

Regular:

  • Serve as is or add a salad instead of a steamed vegetable. If you have started to add back carbs into your diet then you could add a sweet potato on the side or cooked quinoa.

Instructions
