Instant Pot Black Eyed Peas Recipe (2)

Many folks eat black eyed peas on New Years. It is believed that eating them brings in good luck in the year. This ‘must have recipe’ however, can be enjoyed through out the year.

Ingredients

Exact measurements for each ingredients is listed in the recipe card at the end. Here’s more information about the ingredients I used and ideas for substitutions.

  • Black Eyed Peas : 1 cup dry Black Eyed Peas. Rinse them well in cold water before using.
  • Vegetables : I am using fresh baby spinach. You can also use collard greens or kale leaves. Also using one medium red onion and 2-3 medium sized Roma tomatoes for making the sauce.
  • Seasoning : For the earthy rich and complex flavors, I am using, coriander cumin powder along with smoked paprika and turmeric powder. Couple of bay leaves add to the savory flavor. ( make sure to discard them before eating) I also like to add a good dash of Chili lime seasoning. You can use chili powder and lime juice if you don’t have this seasoning easily available. Grated ginger and minced garlic is used to enhance the savory delicious flavors further.
  • Other Ingredients : I prefer to use neutral cooking oil like avocado oil or olive oil to make this stew. I also add a teaspoon of fenugreek seeds while cooking beans and legumes. A teaspoon of brown cane sugar is used to balance all the flavors. A splash of lemon juice adds a refreshing taste to this earthy stew.

What’s the best water to beans ratio for smoothly cooked beans?

As a general guideline, we use 2:1 ratio of cups of water to pre-soaked beans. You should use 3 : 1 cup ratio if beans are not pre-soaked.

This ratio gives good consistency in cooking and gives smooth texture. If you are looking for more liquid soup like consistency, add more water.

Pro Tips

  • Whenever I am making curry / stew with beans, I prefer to mash some beans with spatula while stirring when they are cooked. The gravy in any curry gets awesome creamy and fullness from the mushed up beans.
  • You can also add celery, bell pepper, tomato paste for the favoring.
  • The gravy will thicken slightly and give a nice consistency and texture. You don’t need to add any thickening agent or cream .
  • Leftovers taste amazing too. For storage, use air tight containers and refrigerate it up to a week.
  • Serve it with rice, roti’s, bread, or with salad. My favorite pairing is Turmeric Lemon Rice and Creamy Potato Salad. Hope you enjoy making this dish.

I have never cooked Black Eye Peas, and thought I should try this slightly different take on an ethnic dish. I scored big time and my very picky eating family were surprised by this dish. And I was completely surprised that I did a nice job! Thanks..laisser le bon temps!

You can use frozen or canned black eyed peas. In InstantPot, they should cook on high pressure in 5-8 minutes.

I have not heard of Fenugreek seeds. While searching online, I found several online sources for both ground and whole seeds, but only one store that carries it in stock. However, they only carry the ground seeds, not the whole seeds. Does this make a difference?

Ground Fenugreek seeds will work too. They tend to be quiet bitter in taste so use 1/4 teaspoon only

FAQs

How long do you cook black-eyed peas in the Instant Pot? ›

Ratio = 1 part black eyed peas : 3 parts water. Cook Time = 8-10 minutes. Release = 15 minute natural release, then release any remaining pressure.

Should black-eyed peas be soaked before cooking? ›

Do I need to soak black-eyed peas before cooking? Soaking black-eyed peas make the cooking process shorter. The ideal time for soaking any kind of bean in cold water is overnight or 8-10 hours. To speed up the process, try my favourite quick hot-soak method.

Do you rinse canned black eyed peas? ›

Canned black-eyed peas are best in recipes that don't require slow cooking or a long cook time, which can make them mushy. If you're using canned black-eyed peas, simply rinse them in a colander to remove any liquid from the can as well as excess salt. Then you're good to go!

Can you overcook black-eyed peas? ›

Drain them the next day and bring them to a boil in cold water, then reduce the heat so the water barely simmers: dried black-eyed peas can overcook, and a rolling boil could cause them to break apart. Taste the peas often to check their doneness: They should be creamy but retain their shape.

Why are black-eyed peas still hard after cooking? ›

Most whole dry bean and peas will begin to sprout if you soak them long enough. If they're still hard after you cook them for an hour, be sure they have enough water to cover them, and simmer until they soften. Taste the water. If it's bitter, rinse the beans, and put in new water.

What is the ratio of water to black-eyed peas? ›

To cook black-eyed peas on the stove top, place in a pot and cover with plenty of water (I usually go with one part beans to four parts water). Bring to a boil, then reduce the heat and simmer until the beans are tender.

What happens if you forget to soak black-eyed peas? ›

When cooking black-eyed peas without soaking, rinse them thoroughly under cold water to remove any impurities. Then, place them in a pot with enough water or broth to cover them by about 2 inches. Bring the pot to a boil, then reduce the heat to a simmer and cook until they reach the desired tenderness.

What happens if you don't soak peas before cooking? ›

Don't worry about soaking lentils, split peas, or black-eyed peas (or cowpeas). Lentils and peas are softer than dried beans. They'll cook within 5 to 20 minutes without any soaking time.

Why won t my black-eyed peas soften? ›

There are three primary reasons why dried beans do not soften despite extensive cooking time: 1) they are old; 2) hard water; or 3) the presence of an acid. If you don't think your beans are old, then perhaps your water is the problem. Beans cooked in hard water will never soften properly.

How do you doctor up black-eyed peas in a can? ›

Drain the canned black eyed peas, then add them to the pot along with the oregano, smoked paprika, cayenne pepper, black pepper, and vegetable broth. Stir to combine. Place a lid on the pot, turn the heat up to medium high, and bring the pot up to a boil.

What pairs well with black-eyed peas? ›

The best accompaniment to black eyed peas are collard greens. I don't know why but it had to be something about the smoky flavor of the greens with the flavor of the peas. It's an amazing combination.

How do you make canned black eyed peas taste better? ›

Canned black-eyed peas can be seasoned to enhance their flavor. Common seasonings include garlic, onion, salt, pepper, and herbs such as thyme or parsley. You can sauté these seasonings in a little oil before adding the peas, or simply mix them in while the peas are cooking.

What does baking soda do to black-eyed peas? ›

Bottom Line. If beans make you uncomfortably gassy, sprinkle a little baking soda into their soaking water. It will reduce the volume of gas produced by the legumes, plus, they will cook quicker. If you're even shorter on time, you may want to try some of our favorite recipes to make with a can of black beans.

How do you thicken your black-eyed peas? ›

Smash more of the peas up against the inside of the pot again (this helps the broth thicken). Simmer for 10 minutes more. Check the consistency of the black-eyed peas: If they are not creamy enough for you, smash a few more peas. If the broth is too thick, thin out with a little more water.

Are black-eyed peas good for diabetics? ›

The soluble fiber in black eyed peas slows digestion, which helps the body regulate blood sugar levels and reduces the risk of blood sugar spikes. This lowered risk makes black eyed peas a healthy food choice for people with diabetes.

How long does it take black-eyed peas to get done? ›

Soaked black eyed peas take about 45 minutes to 1 1/2 hours to cook, depending on the age of the beans, how long they were soaked for and how soft you prefer them. If you're starting with frozen black eyed peas, microwave until thawed before adding them to your dish.

How long to cook dried soaked black-eyed peas? ›

Drain your beans from the soaking liquid and give them a quick rinse under cold water. Place beans in a large pot and cover them with 4 inches of chicken stock. Simmer, covered, for about 1 hour. Start checking after 45 minutes to see if they are tender and add more broth or water as necessary to keep them covered.

How do you cook dried black-eyed peas? ›

Add them to a pot over the stove and cover with at least two inches of water or stock. Add any salt or aromatics. Simmer until the beans are tender, about an hour. You can test them for doneness by either tasting them or mashing them against the side of the pot.
